Panuchos are a traditional dish from Campeche, they have a special rounded form and delicious taste. They are prepared with fried tortilla, on top of it you put ground beans, roasted chicken, cabbage or lettuce, tomatoes, avocado, purple onion and habanero chilli pepper.
It's a creation that comes from Don Eugenio, whose nickname was "Hucho". He was a cook in a hotel that was on the road from Campeche to Mérida, and he prepared meals for the guests and travelers. One day, he decided to create his own dish and he called it "Pan de Hucho" but later it was adapted to "Panucho".
